The Australian vice-captain compiled a chanceless 71 not out while five of his team-mates, including fellow Test stars Shane Watson (20) and Brad Haddin (two), tumbled around him.
His patient 209-minute knock consisted of just four boundaries as the hosts closed day two at a precarious 5-171 in response to Victoria's first-innings mark of 378.
"I think he's just been a class above," NSW captain Stuart Clark said of Clarke.

South Australia captain Michael Klinger expressed his delight with the Redbacks performance against England on the opening day of the tour match at Adelaide Oval, with the visitors declaring at 8-288.
Klinger said he would have preferred to start the match with the bat and 'drive' the contest, but acknowledged SA's performance with the ball against 'quality opposition.'
"It would have been nicer to win the toss and bat and sort of drive the game," he said.
